ABOUT THE PROGRAM

Catapult’s Kitchen Incubator features a pop-up window where members can sell to customers.

After hosting a number of ‘pop-ups,’ we have pivoted to a residency model, where the pop-up room is dedicated to one member to turn the area into a temporary restaurant.

Our hope is to give our members the opportunity to test their concept, and to be able to bring their sales to a future landlord or loan officer, to secure funding and space for a permanent location.

  THE CULTIVATED PIG

Kevin Aydelott & Jimmy Fox

The Cultivated Pig will be serving from Catapult four days per week over the next several months.

  Founded by lifelong friends, Kevin & Jimmy, they serve high-quality meats cooked over a live fire. After cooking in fine dining kitchens such as the Four Seasons, Kevin collaborated with his best friend to bring this forgotten style of cooking to life. Their long-term goal is to build a destination restaurant in downtown Lakeland.

Signature dishes include: 

  • Slow Smoked USDA Prime Brisket Plate
  • House Made Pastrami
  • Coal Roasted Eggplant with Garlic Hummus
  • Smoked Turkey Sandwich
  • Mexican Street Corn

HOURS & LOCATION

Wednesday: 11:00 a.m. – 9:00 p.m.

Thursday: 11:00 a.m. – 9:00 p.m.

Friday: 11:00 a.m. – 10:00 p.m.

Saturday: 11:00 a.m. – 10:00 p.m.

Find parking on the west side of the building and the patio on the east side of the building. Follow the posted signs when you arrive to get to the pop-up window.

Is the residency open to the public?

Everyone is welcome to order food from the Cultivated Pig! Whether you are a Catapult member, Lakeland resident, or visiting from out-of-town, all are welcome to stop by.

Where can I find the menu?

The Cultivated Pig’s menu can be found here. Keep an eye on their Facebook & for specials & new items.

Is there parking available?

Yes! Our parking lot is available for customers of the Cultivated Pig. Check out the parking map above and posted signs around the building to get from the parking lot to the patio.

Is there seating available?

Yes! Our outdoor patio is available daily and features plenty of seating, umbrellas for shade, and a beautiful view of Lake Mirror. On evenings and weekends, indoor seating will be available.

What if it starts to rain?

Barring extreme weather, we will continue rain or shine! In the event of rain, check the Cultivated Pig’s Instagram for indoor seating updates.

Can I see inside the building?

FROM POP-UP TO PERMANENT LOCATION 

Our goal at Catapult is to see every business in our Kitchen Incubator open their very open restaurant, bakery, or food manufacturing facility. 

We are excited to launch the Restaurant Residency program with the Cultivated Pig, as they work towards their own permanent location.
