Catapult’s Kitchen Incubator is home to over 30 unique food-based businesses creating everything from Texas-style BBQ, to Filipino fusion fare, to seasonal pastries.

This fall Catapult will feature five kitchen members in our Fall Pop-Up Series from September 12th to November 18th. Join us Monday through Friday, 11am to 2pm, for lunch created by Lakeland’s entrepreneurs.

Mondays: Bandidas

Gabriella Vigoreax & Giovanna Favilli 

From focaccia sandwiches to specialty pastries, Bandidas’ menu is ever evolving to highlight the seasons and current inspirations.

Tuesdays: Our Noire Kitchen

Kadean & Laures Dockery

This private chef and photographer duo make gourmet food accessible and spice up your life with bold and innovative flavors.

Sample Menu Items: Spicy Jerk Wings, Shrimp Po Boy, Chuck Roast Mac, and Pork Belly Tostones

Wednesdays: Vegetation

Rima Schillinger

Fresh, wholesome, and handcrafted; Vegetation Plant Food’s meals will leave you feeling satisfied and energized.

Thursdays: The Cultivated Pig

Kevin Aydelott & Jimmy Fox

Inspired by their roots in Texas + informed by their experience in fine dining, The Cultivated Pig shares their passion for all things BBQ.

Sample Menu Items: Chopped Brisket Sandwich, Smoked Pork Belly Tacos, Pulled Pork Sandwich, and Brisket Tacos

Fridays: Flourish Baking Co.

Kaley Odom

The Flourish Baking Co. menu features your favorite nostalgic flavors and unique items that rotate with the seasons.

Sample Menu Items: Pimento Cheese Egg Sammie, Sweet Chili Sausage Sammie, and Biscuits & Gravy

Find parking on the west side of the building and the patio on the east side of the building. Follow the posted signs when you arrive to get to the pop-up window.


Where are the pop-ups located?

The pop-up series is held on the Catapult patio located at 502 E Main Street, Lakeland Florida. 

When is the Fall Pop-Up Series happening?

The Fall Pop-Up Series will run September 12th to November 18th, Monday through Friday, 11am to 2pm. Preorder your meal or just walk up to the window and order. 

Who can attend?

Everyone! Whether you are a Catapult member, Lakeland resident, or visiting from out-of-town, all are welcome to enjoy food from Lakeland’s startups.

Where can I find the menu?

The startups will promote their menus on Instagram and Facebook, or you can check out the preorder links above to see what each member is featuring this week. 

Is there parking available?

Yes! Our parking lot is available for pop-up series guests as well as the street parking in front of our building. Check out the parking map above and posted signs around the building to get from the parking lot to the patio. 

Is there seating available?

Yes! Our outdoor patio features plenty of seating, umbrellas for shade, and a beautiful view of Lake Mirror.

What if it starts to rain?

Barring extreme weather, we will continue rain or shine! In the event of rain, check the Catapult instagram for indoor seating updates.
