In 2011, Robyn moved to Lakeland from Los Angeles, California with $300, an innovative idea, and belief in the power of community. Her vision landed her in the Catapult kitchen, which bolstered her efforts selling beignets on Saturday mornings. Fast-forward six years, and what started out as a humble farmers market food cart has evolved into a flourishing space housing her three brands: The Poor Porker, Bar Calexico, and Bearcat & Big 6. Since it’s opening, 801 E. Main has been a must-visit Lakeland destination for homemade beignets, drinks, live music, and good company. This gathering place continues to welcome and inspire those from any walk of life and has no plans of stopping anytime soon.

How was the transition from working out of a coworking space to your own space? The transition has been rewarding, but has not come without challenges.

What are some wins for your business since you’ve moved into your new space? 801 continues to be a home and safe haven which has truly been a gift. The biggest win currently is a brewing partnership with a group of women that I am super inspired by. Stay tuned.

Have you been able to hire any new employees? We currently have a total of eight super great employees.

Have any of your goals changed from when you first started to now? My goal continues to be to provide a safe and inspiring space for our community and beyond. It is necessary to remain consistent but at the same time, open to change.

Which specific aspect of Catapult can you look back on and identify as the most helpful to your business? Beyond affordability, Catapult has allowed me to build solid relationships that have been essential for keeping my business alive.

What’s one thing you’ve learned that you wish you knew when you first started? It is highly important to take care of myself as well as the business. It’s easy to get caught up in the day-to-day and forget about my personal needs, goals and desires.
